They are so much more than the spongy, wet, floppy things on a bad pizza.  for one, combined with the avocado, they practically keep vegetarians alive. and second, they taste really really good despite being referred to as the fleshy, spore-bearing fruiting body of a fungus. They are the frog that turns into a prince! Because once you sautee some in butter, or roast them on an open fire brushed with olive oil, or whirl them up for a pate, or make them into duxelles, or... you get what i'm saying.
